Learning about gratitude is an important life skill that starts from a young age. As a parent, I think it is important for us to be role models and practice this, so it is easy to teach our children i.e to say Thank you, Please! and to appreciate one another. Gratitude should be a part of our lives and be second nature to us, so we can appreciate life and everything around us.

Tangled: Movie Premiere on Saturday, May 18 at 6pm ET
Everyone in our home has a special connection with Rapunzel because
- It was the first movie my son watched in the theatre
- Rapunzel is my daughter's favourite Disney Princess
- Like Rapunzel I have been waiting to use my skillet pan... but not to hit a stranger :) rather to make this delicious skillet cake that would be a perfect snack to serve your family while watching the movie.
These griddle cakes are tasty, healthy and filling. This recipe is adapted from Baking Step-by-Step DK book.
1 1/3 cups whole wheat or all-purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt (reduce a little about 1/4 tsp)
1 cup rolled oats
3 tbsp brown sugar
2 cups buttermilk
unsalted butter melted for greasing
Mix all the ingredients except the butter and make a smooth batter. Heat the griddle or cast-iron frying pan to medium-low and brush the heated griddle with the melted butter. Using a ladle drop about 2 tbsp batter onto the hot griddle and cook for 5 minutes, when the bottom is golden and crisp turn and cook the other side for about 5 minutes longer. Serve the cakes warm with jam.
