This cheesecake made with yogurt is flavourful and delicious, it would be a delightful treat to take over to a potluck. We can bake it a day ahead and keep it ready to go in the fridge. Keeping it overnight in the fridge makes it more delicious. I used a Cake Stencil to turn this simple cheesecake more presentable.

For the crust
1 cup graham cracker or cookie crumbs
1/2 cup butter melted
1/4 tsp ground cinnamon
1 tbsp brown sugar
Mix all the ingredients together and press it into a greased 9" pie pan and bake for 10 minutes in a preheated 325F oven.
cheesecake
3/4 cup brown sugar
1 pkg or 8oz cream cheese
1 cup plain Greek yogurt
1 tbsp vanilla
1 tbsp lemon juice
2 eggs
Mix the cream cheese, yogurt, sugar, vanilla and lemon juice in a bowl with an electric mixer on medium speed. When the mixture is almost smooth add the eggs on low speed and continue to beat on low speed until it is smooth. Pour the mixture into the pie pan and bake for about 45 to 60 minutes until the edges are golden brown. I always leave some water in an oven proof bowl when the cheesecake is baking so it doesn't become dry.
The middle will not be completely set. Cool on the counter for at least 1/2 hour and refrigerate for about 4 hours or overnight before serving it cold with berries or sprinkled with cocoa powder.
