Cranberry-Nut Chex® Mix and A Chance For You To Win A Red Carpet Hosting Kit

Dressing up for a party and hosting is lots of fun. I like to go with a theme when I am hosting a party, so I can prepare the food and atmosphere to coordinate for everyone to have fun. When we are watching red carpet events like the Oscars, I like to keep our party casual and watch who is winning, which of our favourite movies get the awards, and get to know of movies worth watching.

While enjoying the show, we like to snack on goodies. I prepare the snacks ahead of time, so I don't have to get up and miss the fun :) 

Chex is a wonderful go-to snack for any big event and I had fun using the gluten free Chex to make this sweet snack. This recipe is adapted from here.

6 cups Cinnamon Chex® cereal

1 cup walnut halves

1/4 cup packed brown sugar

1/4 cup frozen orange juice concentrate

2 tablespoons vegetable oil

1/2 cup sweetened dried cranberries

In a large microwavable bowl, mix cereal and walnuts, and set aside.

In a 2-cup microwavable measuring cup, microwave brown sugar, orange juice concentrate and oil on high 1 minute then stir. Microwave for 30 seconds, stir and then microwave again if need be for another 30 seconds, until the mixture is hot. 

Pour the mixture over the cereal and walnuts, and stir until evenly coated. Microwave the cereal uncovered for 2 minutes and then stir. Microwave for another 2 minutes and stir again. Do not microwave continuously without stirring, as it will burn in the bottom. You can avoid burning the bottom of the dish by microwaving every minute and stirring instead of 2 minutes, if your microwave usually cooks fasters. 

Stir in the cranberries last, so it does not get cooked. Spread the mixture on a waxed paper or foil to cool before serving. Store in tightly covered container.
