As the weather gets warmer, my husband and I try to shed a few pounds we gained in the winter :)
I usually swap for healthier, fresh and local ingredients when cooking meals for my family during the warm months, as it is readily and easily available. I try to get locally grown vegetables and fruits, as well as try to grow our own in our garden. I also find during warmer weather, my family and I tend to eat small, but healthier portions of food throughout the day instead of heavy meals.
I made these Carrot Cottage Cheese Fritters, which are filling, healthy and perfect to have for snack, brunch, or as a side dish. We can serve them during barbecues or outdoor parties. These healthy fritters are easy to prepare, so we don’t have to spend too much time in the kitchen :) I used Nordica Gay Lea Cottage Cheese, which has a delicious and versatile taste. This high in protein and low in fat cottage cheese is gluten and nut free. I served the fritters with Gay Lea sour cream, which some family members liked while others like the fritters plain without the sour cream or yogurt.

To make these healthy, delicious Carrot and Cottage Cheese Fritters you will need...
2 cups of coarsely grated carrots
1/2 tsp salt
1/4 cup olive oil
2 tbsp onion finely chopped
1 tsp grated garlic clove
1/4 cup flour
1/2 tsp baking powder
1 egg lightly beaten
1/2 cup cottage cheese
2 tbsp parsley chopped
pepper and salt to taste
yogurt or sour cream to serve optional
Place the grated carrots with the 1/2 tsp salt in a colander and leave it aside for 20 minutes. Squeeze out the liquid as much as possible, discard the water or use it for another recipe.
Heat a tbsp of oil, add the onion and garlic and cook until it is soft. Add the carrots and cook for a few minutes until it starts to change colour. Remove from heat and put in a bowl and let it cool slightly. Add flour, baking powder, egg, cottage cheese, parsley, salt, pepper and stir well.

Heat the remaining oil in a clean frying pan and over medium heat cook mounded tablespoons of the carrot mixture in batches for 3 to 4 minutes each side until deep golden in colour. Drain well on to a paper towel and serve immediately with optional sour cream or yogurt.
