Delicious Potatoes with Sour Cream and a Giveaway

I enjoy cooking outdoors during the summer because it is fun and allows me to cook leisurely while enjoying the fresh air, sunshine and green space. I cook on the barbecue, and grill a lot of meat, fish, vegetables and fruits. Most of our favourite dishes on the barbecue are savoury. Usually while barbecuing meat, I also put in potatoes wrapped in foil, garlic, onions and peppers. This twist on preparing twice baked potatoes with Gay Lea sour cream is fast and makes a barbecue meal complete.

3 potatoes

3 tbsp Gold Premium Gay Lea sour cream 
salt and pepper to taste
chives chopped
coriander or parsley chopped optional
grated cheese to taste

You can do this...
First pierce the washed potatoes with a fork and then wrap it with a foil and barbecue on 400F for about 10 to 15 minutes, the time on the barbecue depends on the size of the potatoes. Check if the potatoes are done by piercing a fork to the middle of the potatoes, if it is done then remove the potatoes from the barbecue. Once the foil cools to the touch, remove the foil and cut the potatoes vertically into two. 

Or this...
Alternately, cut the potatoes into half vertically and boil it in salt water and let it cool before scooping the inside and refilling. 

Scoop the inside with a spoon and leave a thick shell around the potatoes to refill and barbecue or bake. 

Mix the mashed potatoes with the sour cream, chopped chives, coriander or parsley if using, pepper, salt and fill the potatoes. Top it with grated cheese.

You can do this...
Place the potatoes in a foil or metal barbecue safe baking pan and bake in the barbecue for about 8 to 10 minutes until the cheese melts. 
Or this...
Alternately, broil the filled potatoes in the oven until the cheese melts and is golden.
