Sockeye Salmon Fish Cakes

My family and I enjoy a variety of seafood items because of their nutritional benefits and flavour. My usual sockeye salmon recipes involve baking it, making a curry with gravy, or incorporating it into short-eats. During our trip last year to Saint Andrews, New Brunswick, we enjoyed delicious fish cakes by the sea and I wanted to replicate making them at home. I used fresh, in-season salmon for this recipe. I like the firm texture and the sweet flavour of this fish.

To make these fish cakes you will need...
300 g potatoes
100 g sockeye salmon fillet
handful of fresh parsley
1 egg
1 lemon zest
olive oil
1 tbsp flour and extra for dusting
lemon halves to serve

Bring a pot of salted water to a boil, and cook the peeled potatoes until half cooked.
Rub the salmon fillet all over with a little olive oil and a pinch of salt and pepper. Wrap the salmon with foil. Place the colander over the pot of boiling potatoes, turn the heat to low and cook for 8 to 10 minutes, until the salmon and potatoes are both cooked.

Remove the fish from the colander, drain the potatoes, and return the fish and potatoes to the pot and let them steam dry for a minute. Wash and chop the parsley leaves finely. Mash the potatoes, and when they have cooled, add them to a bowl and flake the fish into it with 1 tablespoon of flour. Add the egg and chopped parsley with salt and pepper to taste. Grate the lemon zest, then mash everything to mix it up.  sockeye salmon
Dust a plate with a little flour. Divide the fish cakes into 4, lightly shape and pat into circles, about 1 inch thick. Place the shaped fish cakes in the fridge for an hour before cooking.

Put a large frying pan on medium heat and add 3 tbsp of olive oil. When the oil is hot, add the fishcakes and cook for about 3 to 4 minutes on each side until they are crispy and golden. Serve right away, with lemon halves for squeezing, or a cool, crisp salad.
