This bean salad needs to be made ahead of time, at least 2 hours before serving, for the flavours to marinate.
540 ml or 19 oz 1 can of mixed bean container
1/2 cup blanched green beans cut into 1 inch pieces
1/4 cup onion sliced to taste
1/2 tsp salt
1/2 tsp pepper
1 tbsp sugar
2 tbsp olive oil
2 tbsp white vinegar
2 tbsp parsley chopped
The mixed bean container that was used for this recipe has chickpeas, kidney beans, black eyed peas, white beans, Romano beans, and baby lima beans. Rinse out the beans before using. You can adjust the flavours according to preference.
First boil the green beans for about 3 minutes until slightly tender, you can salt the water if you want. Remove the beans from the water and let it cool. Cut it into desired size.
Mix the vinegar, oil, sugar, salt, pepper with the beans and leave it covered in the fridge for about 2 hours before serving cold or at room temperature. This bean salad can be kept in the fridge for up to 3 days.
Here is another version of the bean salad with a larger quantity of ingredients.
Pole beans and Bush beans are the easiest to plant and get a harvest from. Therefore, a staple in any vegetable garden. It requires little maintenance. Bean plants do not like fertilizer.
Some information to know about growing bush beans...
It can be planted beside a variety of other plants known as companion plants such as cabbage, celery, corn, cucumber, eggplant, lettuce, pea, potato, radish, rosemary, savoury, strawberry, tansy and tomatoes.
They should not be planted beside fennel, gladiolus, onions, and garlic.
If you are using the Square Foot Gardening method you can plant 9 bean seeds per square. It needs to be planted 1" deep and requires water, try not to make the soil go dry. It can be direct planted as soon as the soil is warm and the outside temperature is 15 degrees celsius. Bush beans are usually about 12 to 18 inches tall. Some bush beans require some support. Make sure it is planted in good quality soil with compost. Bush beans take about 8 weeks from planting to get a harvest.
Some information to know about growing pole beans...
Pole beans are vines and need a trellis to grow. Establish a trellis before planting the seeds. It can only be planted once, in the beginning of the season, as it takes 10 weeks to harvest. Direct seed after last spring front when the outside temperature is 12 degrees celsius. If using the Square Food Gardening method plant 8 seeds per square. They need heavy watering, keep the soil watered. Pole beans can be planted with carrots, corn, cucumber, eggplant, lettuce, pea, radish, savoury and tansy. It should not be planted with beets, cabbage, gladiolus, kohlrabi, fennel, onion, allium, and sunflower.
When you are planning your gardening, consider adding different types of beans.
